This recipe has been made by our family for over 70 years and we're proud to offer it again to the public.

My father, Buddy Hall, started Applecreek Orchards in the late 1970's to provide the highest quality fruits and vegetables to the public. The orchard, located in Scott County, Kentucky, was operated by my family: my father Buddy, my mother Betty, my sister Amy and I (Chip). Our orchard mainly produced U- pick strawberries and various varieties of apples; however we also produced blackberries, raspberries, blueberries, peaches and many other vegetables. In fact, we had one of the few central Kentucky working orchards open to the public.
During the time on the orchard, my father, who always had a true entrepreneurial spirit, wanted to try his hand at making preserves and fruit butters. So he turned to the nearby Shaker Village at Pleasant Hill for inspiration. The orchard closed in the early 90's and my father formed a specialty food company Applecreek Farms. My father combined extensive study of Shaker recipes and cooking techniques with his own exhaustive experimentation to produce a unique and delicious line of home style preserves and fruit butters. Fruit wasn't the only sweet that my father enjoyed! He also worked with a Nestle food specialist to develop a line of caramel and chocolate fudge dessert sauces.
Now my father got his nickname Buddy for a reason. He developed special relationships with his customers, vendors, and fellow food companies. He was a founding member of Kentucky Proud and one of the first members of the National Association for the Specialty Food Trade (NASFT). He also built a relationship with our friends at Buffalo Trace. Buddy started to experiment with bourbon in his recipes and developed a unique line of Bourbon flavored products. These products include a Kentucky Bourbon Marinade, Barbeque sauces, and dessert sauces.
However, my father's real dream was to open a restaurant. In the mid 2000's he opened Applecreek BBQ in Lexington, serving his award winning BBQ Sauce. Unfortunately, my father passed away shortly after retiring from the restaurant in 2009. However, I'm still carrying on the Applecreek Orchards tradition with the specialty foods product line that my dad started. I am joined by my wife, Karen, and long-time friends, Mike and Tammy Leal, as we continue to provide high quality products, prepared and packaged by hand in small batches, ensuring their freshness and flavor.
So try a sample of Applecreek Orchard's fruit butters, preserves, marinade, bbq sauces, salsa, relish, caramel or chocolate fudge dessert sauces, and you will agree that my father's insistence on quality still works!

A few years later the creamery began making ice cream and delivering it to neighbors by horse and wagon. Of course we've added our own touch to create some new classics like our exquisite Rhapsody En Bleu. Our Tuscan Sun is an Asiago with sun dried tomatoes and basil. Our Abbey Road is an old English Cheddar with organic sun dried tomatoes. Or try our exclusive Coffee Gouda for something really unique. And of course our Ginger Rhapsody is an unforgettable taste experience. We have thought about renaming this our WOW cheese because that's what almost everyone says when they first try it.
Our cheese is made from all natural JD Country Milk, from a Mennonite family owned and operated dairy farm in Logan County, Kentucky. The cows are pasture grazed and never given any antibiotics or hormones. Instead they are fed a vitamin enriched diet and all the grass they can eat. The milk is not homogenized and is pasteurized at just 145 degrees, then quickly cooled to preserve the natural flavor and enzymes that Mother Nature intended. We believe that happy cows produce better milk.
We make cheese by hand using European techniques that use no modern equipment because we believe that protects the flavor and texture of the finished cheese. This is a lot more work and very time consuming, but we believe it creates a better cheese.

The Brownings, Reba and Paul as they are called by their customers, have been in the ham busines for 38 years and have done very little advertising. Word of mouth has been the greatest salesman for hams. Browning hams are shipped from coast to coast.
Paul's dad taught him the business. "When we ran a restaurant in Paris, we used his hams. Although he passed away, he is not forgotton by our customers." Browning's hams come from long-standing country ham curing families. Reba's dad also cured many hams. "The greatest smell is to wake up in the morning with ham frying and biscuits in the oven. Paul and I have experienced this many times."
We give each order for cooked hams our full attention to see that they are cooked and coated with our special coating, blended with spices, and carefully sealed so none of the flavor escapes.

How do I cook the perfect goetta patty?
First, slice the goetta into half-inch patties. Making sure they do not touch each other (to be sure they will not stick together), place the patties in a non-stick skillet that has been preheated to a medium temperature, 350 degrees. Let cook for about 6 minutes, allowing the first side to brown completely. Flip, and brown the other side until crisp. When both sides are golden brown, the goetta is ready to enjoy.

The Kentucky Beef Council is an organization working for the cattle producers of Kentucky in areas of promotion, education and research. The Beef Checkoff funds these programs.
The Checkoff is a $1.00 per head collection, which is placed on all Kentucky cattle when they are sold. Fifty cents out of every Checkoff dollar collected goes to the Cattlemen's Beef Board in Centennial, CO., which oversees Checkoff programs. The remaining 50 cents stays in Kentucky to fund state coordinated activities.
The Kentucky Beef Council office is located in Lexington, in the same building as the Kentucky Cattlemen's Association (the membership division of Kentucky's beef industry). The Kentucky Cattlemen's Association serves as the "certified state beef council" collecting the checkoff funds and placing them in the KBC's account to be used for promotion, research, consumer information, producer commuincations, and industry information.
The Kentucky Beef Council is one of 46 state beef councils. Beef promotion, information and research programs are coordinated between the state beef councils, the Cattlemen's Beef Board, and the National Cattlemen's Beef Association.

Kentucky Specialty Sauces (KSS) is owned and managed by NIWard Management Group, LLC, a woman-owned business based in Lexington, Kentucky. Nancy I. Ward, president and owner, founded KSS in 2003 after encouragement from friends and family to make her sauces available to others. Nancy's confidence in the distinctiveness and marketability of her signature sauce, as well as her passion for cooking, convinced her to commercially produce and market her sauce. Due to customer demand, Nancy developed other multi-use condiments/sauces and continues to search for new recipes with uniquely pleasing tastes.
Bluegrass Steaks and Everything Sauce is the signature sauce produced under the Kentucky Specialty Sauces brand. As this initial product developed a customer base, more products evolved to continue the focus on unique taste, quality uses and the promotion of Kentucky as a culinary leader.
Nancy initially founded NIWard Management Group, LLC as a business/project management consultancy as a result of her technical training, certification and professional experience in project management. However, the combination of the support for her to commercially market her sauce, her relentless investigation of mass-producing the sauce and establishing a small business, she became permitted and licensed to produce Bluegrass Steaks and Everything Sauce in 2003. She initially made this sauce by hand, but has now collaborated with a licensed private label kitchen in Kentucky to more efficiently produce and market all of her products.
Nancy also continues her project management consultancy practice and is a partner in the Solarity Group, a project management training and consulting company, Midway, KY.
Nancy retired from Kentucky state government where she worked in analyst, management/project management and executive capacities mainly involving information technology in various state agencies. She is an alumnus of the University of Kentucky with a BA in Political Science and obtained a MBA from Xavier University with a concentration in Information Systems. She also is certified as a Project Management Professional (PMP) with the Project Management Institute, the global professional organization for project management excellence.

Sunflower Sundries is an organic farm started in 1992 by Jennifer Gleason. A collection of traditional foods and herbal soap are hand made on the farm and sold throughout the USA. We make the best jams from local organic fruit and organic sugar, and nothing else. No pectin is added and the jam is twice as fruity and has less sugar than other jams. Over 12 kinds of jam will be at the show with samples to taste, including some hard to find varieties: Gooseberry, Black Currant, Rhubarb & Blackberry, Wild Blackberry and more!
Our coarse-grained mustard is made from freshly ground organic mustard seed and local honey, sorghum, maple syrup and fine wine vinegars. We offer 4 different flavors, all sampled at the show.
We grow an acre of heirloom open-pollinated white corn called Hickory King, known for making the best corn meal and grits. We hand plant, hoe, pick, husk & shell the corn, and grind in our own mill into fresh corn meal and grits that taste sweet and corny, like long ago, before cornmeal was degermed and sat on a store shelf for a year.
Although not a food, our soap is known across the country for its skin softening properties and long lasting bar that lathers abundantly. We make over 12,000 bars of soap per year and have been selling to some of our customers for the entire 20 years we've been in business. Great for your whole body, and good for washing your hands in the kitchen!

Weisenberger Mills is located on the South Elkhorn Creek in southern Scott County, Kentucky. The creek has provided the water to power the mill's twin turbines since the early 1800's.
Six generations of Weisenbergers have operated the mill at the present location since 1865. August Weisenberger emigrated from Baden, Germany to start milling at Midway, Kentucky in 1862. He purchased the existing mill in 1865. Philip, his son, was the second generation to take over operating the mill. He was later joined by his son August. Today, Philip Weisenberger, August's son, owns the mill. He has been joined by his son, Ernest, and grandson, Philip.
In the early years, our primary products were soft wheat flour and white cornmeal. Through the years it became apparent that the customers demanded more. As a result, our present policy of meeting all the baking needs of our customers evolved.
We now offer more than seventy items in various sizes. Our inventory contains flour for any baking purpose, complete mixes for many popular end products, and breading blends for chicken, fish, meats, and vegetables.
